If you have a contract and then the details in the contract dictate what they can and can't do and what happens for your mistake. Otherwise it is very hard to prove or do anything. Retain a lawyer if you feel you are being cheated or if they are violating the contract. Or simply find another job. You cannot work a complete week for free. You can also contact your local labor board.
