Coconut milk allergy?

Questions about: Coconut water, Coconut milk and Coconut oil?

  • Coconut water: I'm getting some sort of rash I've never had before. And am new to drinking coconut water. What's the relationship between the two? I just read where the water needs to be drank right after opening the coconut or within 24 hours. I was not doing that. I was buying 1 liter from a nearby place and drinking it over a 3-5 day span. Could this be the problem? Or are some people just allergic to coconut water? ALSO: Coconut milk: I just made some homemade milk from the coco meat. How many days will that last without going bad as I'm mixing it in my morning smoothie and made enough for about 3 days? ALSO: Coconut oil: I bought some oil and am drinking a little bit of it. What's the health benefits / differences between the oil and water? Or milk for that matter. Thank you! This rash is not good! Hopefully it's not from the coconut water...

  • Answer:

Coconut water is just that--a green coconut has "water" some use it for the kidneys. Yes, it goes bad quickly. Milk is when the green coconut is made by processing grated coconut with hot water or milk, which extracts the oil and aromatic compounds. It has a fat content quite low about 17%. When refrigerated and left to set, coconut cream will rise to the top and separate out from the milk. (I make the milk in my vitamix). Coconut milk contains a large proportion of lauric acid, a saturated fat that raises blood cholesterol levels by increasing the amount of high-density lipoprotein cholesterol. And it's very fattening. The saturated fat of coconut oil may be a better alternative to partially hydrogenated vegetable oil when solid fats are required.I use it instead of butter, and if you make it yourself it is mainly of medium-chain triglycerides--helpful when desiring to lose weight. That may create a better blood cholesterol profile plus it is very delicious.
