On Mario Sunshine how do you get the special stars?

On Gelato Beach and Pianta Village, there are special stars that can be collected. Has anyone found the special stars in those levels? How many stars are on Mario Sunshine?

collect red coins. sometime the red coins are only on certain levels but other wise you can only get them from main Delfino Ilse.
