What is dirt biking?

Im starting dirt biking what is a quite fast dirt bike for someone 5 ft 4 my limit is 500 pounds?

I go camping with my friend a lot and we go dirt biking my parent recently told me that that don't want to to go because i'm not properly protected. I wear a helmet and that's it what else do I need and what do they do?

I'm new to dirt biking and intend to ride on trails with steep inclines. I'm wondering what size/make would i need to really pull me around for about $2800.00 give or take a few hundred dollars.

I'm looking to get into dirt biking, mostly trial riding, but knowing myself i'll probably race as well. I'm 6'1" and weight 165lbs.
