How do I add a contact category?

I coach and parents often give me 2-3 email addresses for contacting them. In the past I've been able to create a category, add the contacts, then edit the category and add the add'l email addresses for each contact. I cannot find this capability on...

I set up a category in Contacts and want to add more email addresses to it from my existing Contact list. How do I do this?

When I set up my category, I added the right contacts but it only included one email address per contact, despite the fact that several contacts have multiple email addresses that I want to send to.
