The best pie crust recipe?

What's a good pie crust recipe?

  • OK I'm making apple pie and I want to make the crust... I've made like 3 apple pies so far and none have turned out great, mainly because of the crust. I hate normal pie crusts... i don't understand while they are flaky and buttery tasting. I think it should have like a sweet taste to it, not sugary mind you but maybe something with cinnamon or brown sugar. IDK. I just don't see how the whole flaky crust thing goes with the appley sweet innards.

    1/3 cup sugar, 1/2 cup butter, 1/2 cup flour, 1 table spoon vinegar (the acids in the vinegar give the crust a crispy exterior during baking), 1 table spoon baking soda, 3 eggs, whipped cream (just a tad) and finally whisk all the contents together thoroughly and bake for about 10 minutes. The result will be a crispy, fresh tasting, oven baked crust perfect for a pie.

I like to use the pie crust recipe using lard from the Joy of Cooking. That gives me the best, flakey crust that you say you do not like. Okay, try a graham cracker crust with some cinnamon and sugar in it for you apple pie, or a ginger snap cookie crust. Just make a crumb of the crackers or cookies and have at it. Bake the crust first and then fill and bake both the crust and the filling. I would also say that I like the dutch apple pie variety with the crumbly topping and not a top crust per se. One more suggestion is a apple turnover of sorts with puff pastry and an icing on top.

If you want it to be flaky use lots of butter and almost no water. I never measure it out I just put around a cup-cup and a half of flour a stick of butter, 1/4 teaspoon of salt and a teaspoon of water and mix in more flour butter and water as I feel necessary. Not the best way of doing it i'll admit but hey when you've got people offering to pay you to make pies you don't change your ways of doing things. If you wanna add some cinnamon or brown sugar you could add a few teaspoons but, I've never done it so I couldn't tell you if it'd taste good, the flavor of the things you add into the pie filling will give the crust some flavor so don't worry about that. Seeing as you say you don't like flaky use more water.
