Each key on the keyboard contains several parts (we call them roots) of the characters and we type all the parts(or less) of the character and we get them. Beijing 北京 You type UX and YIU, you get 北 and 京, or you could type UXYI to get 北京 in one shot.

there are also loads of other different chinese spellings basically like different levels of spelling high,medium and low. they probably use the low level of symbols which isn't a lot it's what they get children started on .
