Is there any possibility at all that you hit something - even something soft like the sandy bottom and might have "spun" your hub? Inside the prop there is a rubber hub and its meant to let go in case of a soft or hard grounding. This will make the prop shaft turn uncontrollably fast yet not turn your prop in the same rpms as before. This will cause racing of the engine due to the lack of water drag on the prop, and you will see a racing engine rpm with little speed to equal it. If its not that, then something on the cables must be wrong. There is a cable adjustment on the engine which controls the sensitivity of the throttle, perhaps this is getting hung up or somthing.

Mark gives a great answer & it's probably on the $$$ but it could also be something as simple as a spun hub on the prop. Let us know what you find out to be the issue.
