Jeez that's all very ignorant. It wouldn't be very big of you but you could just try to insult them back with relevant stupid stereotypes? :P e.g. if they're American - they are fat, stupid, racists,environmentally unconscious, arrogant, ignorant etc.

You could thank them for their compliment, which might throw them a bit. You could play along a bit. Agree with them. Be a bit cleverer than them and try to turn their perceived insult into something positive. Tell them that it is wonderful having a pot of gold as it saves you having to buy lottery tickets. Do anything but get mad or offended. That is what they want, so don't give it to them. Give them the complete opposite. You could also confuse them a little. You could say something in Irish to them. There are lots of things you can do. We may be associated with the things you listed, but we are also known for our sharp wit and quick thinking, so use that aspect of our Irishness.

Unfortunately I think it's become clear over the last few weeks how you deal with someone online is different to how you deal with someone face to face - the comedian down the pub is easier to deal with then a bunch of malicious kids who wilfully target someone

Anyway who cares it has no bearing on our way of life or society whatsoever!
