My cousin has collected wild mushrooms since a child and she says that the way to check is to stick ones tongue on the gills or the sponge and if sour/burny it is either inedibly sour or poisonous. Always best to pick mushrooms with an expert or take what you have to the chemist. Many spongy mushrooms are edible.
