What career options are available in Public Policy, Law, etc (Masters) after B.Tech in Computer Science from an IIT?

There are several opportunities if you're dedicated enough. You can make into any of the top law schools like Stanford, Harvard, Columbia,etc. If you are interested in this path, you can apply for internship under some prof who has overlapping interest. I did one such internship at Northwestern and could have done law at NW but my research interest changed. If you want to take up a career like IAS, you must get involved in groups at IIT preparing for UPSC exams. They are dedicated study groups that meet every week and discuss related stuff. Whatever you want to do, pursue it and don't waste time thinking about choices. If you feel later that it is not your cup of tea, you can always change but don't waste time. Take up either one stream or any other you are interested in right now and pursue it with full dedication. P.S. I am a CS grad from IIT and pursuing PhD at US univ.
