Do I include state sales tax when taking tax deductions and credits?

For example, on the educator expenses if I buy something at the store and the item itself is $10, but with state sales tax it is $11 - do I deduct $11 or $10. The same goes for other deductions and credits. I also bought a new door to get the energy tax credit, and am wondering if I include the state sales tax... please provide IRS documentation if you can in your answer. Thanks!
