how about getting a key made and then have it engraved with your name. Give it to her on a necklace and tell her that now she has the key to your heart. (It would be better if you can find a key that has a heart shaped handle)

Take her on a bike ride and a picnic (if you are in a part of the country where you can do that). Or if you are in snow country take her for a day of skiing or fun in the snow and a picnic in the cold. It doesn't have to cost much and you will see if she is having a good time. Then you could add a little something special like a locket or a bracelet.
