Because they live in habitats where the soil is low in nitrogen. Some plants deal with this by forming symbiotic relationships with bacteria that fix nitrogen. Carnivorous plants have a different strategy. They eat nitrogen rich insects. The pitcher plant has even been know to trap rodents. Crack some books or do a web search. You will learn better if you read and figure things out on your own.
