Plant science experiment?

Hi I was wondering if anyone has any good ideas for an experiment for my Plant Science course? It's pretty much an introductory level, and we don't have much time (it will have to be over before Christmas, maybe around Thanksgiving). It would have to be something using a plant that grows fast, like peas. Any help brainstorming is appreciated :)
