all colour comes from pigments. some plants have the biosynthetic pathways to make some pigments but not others. in flowers, the pigments are stored in the petal cell vacuoles. the vacuoles have a pH level that is usually determined by the plant's biology. the vacuolar pH influences the final colour seen. blue roses are a good example. roses do not have the biosynthetic pathways to make blue pigments. experiment to give roses the biosynthetic pathways to make blue pigments resulted in violet roses. this is because of the vacuolar pH influencing the final colour seen.
