How do you preserve food?

Okay for an art project i have to make a 3D replica of this sculptors' art. I am doing Claes Oldenburg and i was going to make a hamburger into a sort of book type thing. Anyway i was wondering if there is some way to preserves some cut up fruits and veges like lettuce or tomoatos etc and i saw that shellac might work??? Any suggestions

Answer:
claes oldenburg didn't use food to make sculptures. for example for his hamburger he used vinyl. Unless you use already dried food it's going to decay. shellac isn't going to work. If you want to copy Claes Oldenburg methods you would use some different material and make it look like it was made out of food.
