    I don't have any books or internet sites for you, BUT I know for a fact that the fact that the Greeks were perfectionists and they they loved perfect bodies and faces. That's why the Greek sculpture is alway of beatiful women and muscular men. If you look at some Roman busts, you can see that it show the imperfections in humans. It's shows emperors with big noses, because that is what was really there. In Greek sculpture they would just push they fact that he had a big nose aside and make it look normal in the sculpture. Hopefully that kind of helps
