What is the difference between plaster of Paris and plaster paste?

In the book I'm translating, plaster of Paris appears white on the photos and plaster paste is either white or red-brown. Thank you!

I believe plaster paste dries (like sheet rock mud) and can be rewetted while plaster of Paris definitely sets - a chemical change.
