    I love to do things with fresh fruit for Easter Dessert. My favorites are fresh fruit trifle or strawberry shortcake. Everybody likes them, and both look spectacular but are easy to make. For trifle, I just layer poundcake chunks with fresh fruit and whipped cream in a trifle bowl, repeating twice, topping with whipped cream and shaved chocolate. For shortcakes, I just make baking powder biscuits, adding a little sugar to the recipe and sprinkling them with sugar before baking (I do this the day before). Then I macerate sliced, fresh berries in sugar overnight. The next day, just assemble the shortcakes before serving. Split the shortcake, top with berries and whipped cream, add the top of the biscuit with more berries and whipped cream. If you have it, stick a fresh mint sprig in the top to make it look pretty. Oh, I just remembered what the little kids like best: I make birds' nests out of marshmallows melted with butter (like for Rice Krispie treats), but instead of rice cereal, I add a bag of flaked, sweetened coconut and some green food coloring. I shape them into "nests" and add three jelly beans for "eggs." They're really cute. If you don't like coconut, then corn flakes work just as well.

Perhaps you could buy ready made Chocolate Cups or Brandy Snap Baskets and fill them with berries and top them with either Chocolate mousse or Whipped cream and serve on a bed of Raspberry Sauce made by Pureeing Raspberries and sugar in a food processor and straining them to remove the pips....
