How much salad, pasta and bread sticks or garlic bread do you make for a wedding with 80-100 guests?

My friends are getting married on 3-17-12 and they both want pasta that day. My husband and I maybe making the food that day because the soon to be groom got into a fight with the person who was going to make there food. How much do we make of salad, pasta and bread sticks or garlic bread and want tips of pasta and pasta sauces will be good that day and there will be kids with picky eating habits there also. There maybe 120 guest that day i do not know yet.Thank you to all who help me out with this one.

The bride will love you forever if you serve the pasta with a white sauce. Wedding dresses and marinara are not friends. I recommend fettuccine alfredo, with people getting served pasta, picking between chicken and shrimp, picking sauteed veggies, and then pouring the sauce on top. You'll need: 30 lbs = 4 oz uncooked pasta per person 23 lbs = 4 oz boneless skinless chicken per person for 3/4 of the people there 23 lbs = 4 oz peeled, deveined shrimp per person for 3/4 of the people there 15 lbs = 2 oz mushrooms per person 15 lbs = 2 oz zucchini per person 15 lbs = 2 oz red bell pepper per person You need a half cup of sauce per person. For 120 guests that's 3 3/4 gallons. Take your favorite recipe for alfredo sauce, a good one with plenty of cream and real parmesan, and find out how much it yields (test it now! testing your recipes is the secret between successful catering and despair). Divide that by half cup servings and you'll know how many people it feeds. Divide the total number of guests by the number of servings and you'll know how many times you'll have to multiply the recipe to get what you need. You will have to test your bread stick recipe in advance as well. It's the same method for figuring out how much you'll need, but with two ounces by weight of dough per person. For 120 guests that's 15 lbs. You need an ounce of undressed green salad per person. That'll be 8 lbs. Remember salad is bulky and light. For dressing you need maybe a half ounce, or 4 pounds, if you're doing a thin coating on all of it. Don't dress the salad until right before serving.
