Does the HD picture quality setting on your HD cable box really make a difference?

I have a few HD tvs, some just 720p or 1080i and one 1080p My IO TV cable box has a setting to change the picture quality on each channel, ie reg quality is 480 but then it changes to 1080i (highest quality the cable company has now), sometimes to 720p, etc. I can also just set it to stay fixed on 1080i, does this make a difference AT ALL in the quality of my HD picture? I doubt you can see any difference. But. On 720p TV set it ti either 720p or 1080i. On 1080p TVs set it to 1080i.
