How do I change my writing colors so that they will also print in color when I've run out of black ink?

You don't. Most printers just post an internal error code for the computer that say 'I've got an ink level problem' and that's what the printing software detects. Being hard code programming, it doesn't/can't evaluate what you want to do vs. what is available.
