What are some good high definition video cameras?

Well... you can either spend lots of money for a camcorder with a high frame rate or you can can see if moving to manual shutter speed and speeding up the shutter to 1/500 second is enough. Typically, when the shutter is set to automatic and you are indoors, the shutter speed is 1/60 second or 1/125 second. As you have learned, a lot can happen in the time. Since you did not tell us which camcorder, we don't know what the possible shutter adjustments are. Just leave the aperture/exposure on auto. When the shutter speed you select is too fast, the aperture won't be able to open any more and the video image will darken. If you really just want a new camcorder, that's cool, too. But get one with the biggest lenses and imaging chips you can afford - they are what will let you increase the shutter speed even further. When you get down to around the 12 FPS, the video will start to take on a jerky playback look. That's when you need to move to make the investment in 200+ fps cameras... Most consumer camcorders are in the standard 30 fps ramge (don't let the 60 fps fool you - they are interlaced frames that get you back to 30 fps). Som Sony camcorders can burst 120fps for 3 seconds resulting in a 12 second playback at regualr 30 fps, but it is just that burst - and not continuous. The Canon HF S series has 58mm diameter lenses, but as an AVCHD camcorder, cannot handle action very well. If you are stuck to high definition, that means DV/HDV because those formats are least compressed - and in the consumer camcorder environment, that means miniDV tape... starting low and working up... Canon HV40 Sony HDR-FX7 Sony HDR-FX1000 Canon XHA1 Sony HVR-Z5U Sony HVR-Z1U Panasonic AG-HVX200 (DVCPRO HD to P2 cards) Canon XLH Sony HVR-Z7U (DV/HDV to flash memory) and they go up from here... The higher end units can "overcrank" and capture a faster frame rates. Or you can check the Phantom at visionresearch.com but you need to bring your computer along - many high speed video capture devices do not carry internal storage.
