How to stop iphone from syncing certain things to itunes?

i have an iphone 3 and i have the iBook app and every time i sync my phone to itunes all of the books that i have downloaded sync to itunes. i just found this out and there were some synced to itunes that i had already deleted from the app. anyway, i don't really want them syncing to itunes, so i was wondering if there was a way to stop it from doing that without having to not sync my phone. also, if i make playlists on my phone, they sync to itunes when i sync my phone too, which, that's not as big as a deal, but then i go to my playlists from my phone after i unplug it from my computer and my playlists aren't there.

when you hook your ipod to your computer open tunes and then on the left side click on your ipod. then there should be like a list of commands and you can choose which one best suits what you want for example you can choose only sync checked items can anyone answer this? http://answers.yahoo.com/question/index?qid=20110719122527AA6W3re&r=w
