Answer:
Recording phone calls not possible on stock P500. You have to look for a kernel which supports 2-way call recording. Otherwise not possible. And for changing kernel, you need root and bootloader unlocked.

I believe it is illegal to record phone calls, without the knowledge of the other person who is on the line. However, you may find an option to record in Options tab when the phone call is actually going on.
