How do I change the text of the message that I can send to people who are calling me on my Nokia phone?

When a call comes in on my Nokia 6120 phone - from another mobile caller, I have the option to Answer, Reject or send message. If I choose send message, the message says 'sorry, I will call you later'. How can I personalise this text message? (It isn't in the templates folder).
