What can I do on my honeymoon to Orlando, FL?

I'm planning on honeymooning in Orlando this June. We aren't interested in doing the usual Disney/Universal theme parks. What low-key, memorable activities are available?

-Take in a small-venue concert at House of Blues or Hard Rock Live. -Go to one of the water parks. -Pleasure Island! -A nice meal at Fulton's Crab House, Texas de Brazil, or any number of other restaurants.
