    Well you could get a lot of greasy and tasty friend foods on the side of the road in Trinidad. Foods such as doubles, alloo pies, meat pies etc. Trinidad has a low unemployment rate statistically but do not be fooled by that. A lot of people are employed in "make work" schemes. So you see them idling by the side of the road or a gang of 12 to 15 men spending a week to cut the grass on a short strip of road. The government can afford this because the country is rolling in oil and gas money. However the crime rate is ridiculously high. Over 500 murders last year in a population of 1.3 million. Lots of robberies and other violent crime is also not even reported.

You seem to have answered your own question. Objectively though, most countries seem to be low on health-care workers in general. Once you do your research, I am sure that you cna be emplyoed anywehre in the world. Personally, try Barbados or T&T in the private health institutions first.
