What kind of food will I experience in Thailand/Laos?

A team of us are going to Thailand & Laos next year for a month-long expedition, travelling not just in the big cities but also visiting some of the more remote villages on our treks. Was just wondering what TRADITIONAL Thai/Lao food is like, and what are some of the main ingredients used? Some people have allergies - fish, nuts, citrus fruit - what should they avoid? Thanks a lot, hope you can help :)

There're American fastfoods everywhere. Then, there're traditional Thai foods. Southern and northeastern foods usually are very hot and spicy. Exotic by all means, but you can still stick to normal foods that usually dead and cooked before consumption. Northeastern foods sometimes can be very hot, and some of them are raw. They also are very similar to Laos foods. For example, sticky rice, Papaya salad, BBQ beef, mince beef (can be raw sometimes, mixed with many things that if you're not advangerous enough, try to avoid them). Southern foods can be extremely hot. Some western guys in Thailand posted an answer in this forum long ago that his wife cooked foods for him that so hot, it blows him into another dimension. Otherwise, normal central area foods consisted mainly of rice and fish. Some are hot and some are not. Thai people eat lots of seafoods in many form. Seafoods can be tricky especially if they are not very fresh. It can cause stomach run easily. Most people enjoy Thai foods which are cheap and abundant because Thailand is probably one among the world largest foods producer and exporter nation in the world.

If some are allergic to fish, nuts and citrus fruits, they should avoid fish, nuts and citrus fruits. Otherwise, most Thai foods can be very spicy, fish, pork, chicken, all kinds of vegetables and fruits, rice and noodles are common ingredients. Google or do a web search for Thai or Lao foods and you should get lots of results. when you go to Laos don't forget to try out Laos dishes. Sticky rice is staple food for Laos. Lao use lots of fresh vegetable in their cooking. Some of Lao dishes can be very spicy for example papaya salad, but overall Lao food is not as spicy as Thai. Lao don't use as much coconut milk in their cooking as Thai. You will find it is a rice based culture, with vegies, chicken and pork combined w/chili peppers and spices - fish oil is used often, as is sugar and MSG - you might want to learn some basic phrases in regard to allergies - Mee pare [ have allergy ] bplah = fish nam bplah = fish oil
