    it depends on settings of your cellphone. if you can change the language settings to Chinese.. then there are strokes on number pads or else some cellphones have PinYin settings.. so when you type in PinYin Roman... you will get choices to make a word. for example if you have to type 'Ni Hao', type 'Ni' comes with many options like 你 尼 拟 泥.... and while typing 'Hao' comes with 号 好 浩 昊 choose the correct one and send it!

if your cellphone doesn't support chinese chars, you can send it by pinyin or english. or change your cellphone :)

Most cellular phones in Asia can be set to "Settings", "Phone Settings", "Language" or something similar. I have a cheap Nokia which has Chinese and English. Once set, it will work for SMS or text messages.
