You probably mean "da2ah" not "do2ah", in Egypt "do2ah" is a mixture of dried ground spices that is served as condiment or seasoning, mainly cumin, coriander seeds, sesame, thyme, and salt (there could be variations) "da2ah" on the other side, is a dressing, in a form of consommé, it's mainly garlic, cumin, vinegar, and salt, it's poured on Koshari to add it's pungent and distinctive flavour. Tomato sauce is usually added as well to complement the flavour. Koshari without "da2ah" is just boiled rice, pasta, and lentil, it would be very bland. Unless, when I cook Koshari at home, I cook the lentils in lots of browned shallots (or onions) and cumin, this goes halfway :)

I just have to tell you that this question/answer made my day. It has been too long since I ate Koshari and I have been able to replicate every part of it in my kitchen except the da2a taste, but now some people here have given me new hope hahaa :)~ so..yes.. you shouldn't eat it without the da2a..it really makes it taste like "Koshari" and not some Italian dish.

Aw ! No way..mayb2ash Koshary for me without da22a :D u know,if my mother forgot the da2a lw 3amalet el koshary...i go and get a lemon from the fridge and cut it into 2 pieces we ba3sorha 3aleh :D (ba5tare3 ana) sa3at betenf3 brdo,bs for sure it won't compensate the real da2a :)

howwa is the tomatoe sauce called do2ah? i call it salsa and basal me7ammar. well in all cases it is bland and tasteless without them.
