Does it matter if i train all muscle groups on one day or i use training schedule?

I love to work out hard and long. I go to gym 3 times a week and i work all the muscle groups (Shoulder, abs, chest, biceps, etc... ) It takes me about 3 hours. And almost everyone there train by a certain training schedules. (day 1. Chest. day 2. shouldrs etc... ) and they train about 1 hour. Do i train more muscel and gain more if i work every muscle group a day or i work out by a training schedule. In my oppinion i don't like to work by a schedule, i love to work out long hours (3h +) and train all muscles. So what way works best for better muscle gain??

As long as you have 2 days to recover between training you can either do a total body routine or only work different parts.
