Complicated Matter Regarding E2 Visa Application to Teach in Korea from Canada?

Hello, I have secured a job teaching for a school in Korea. I have submitted my documents for processing in Korea, however it has taken much longer than the estimated 5-10 days and the school is unresponsive. The recruiter is just stalling me and telling me its out of my hands. I was wondering if I can accept another job and submit new documents to the embassy in Korea for an E2 or if it will be a problem since I already 'supposedly' have on application processing. My other option is to fly down to Korea myself and take care of the E2 Visa from within Korea. Thanks in advance.
