I have to get a Chinese visa when travelling to Italy, but am not Italian. Anyone know if this is possible?

Well, for sure the Italian Embassy will not help you with this issue. The website of the Chinese Embassy in Italy is maintained in Mandarin and Italian only. For visa application it states: "Il cittadino italiano o il cittadino di un terzo paese deve presentare il passaporto originale con validità superiore a 6 mesi con delle pagine bianche disponibili per applicare il visto. Il cittadino del terzo paese deve inoltre presentare il permesso di soggiorno originale con una fotocopia." My limited Italian language capabilities reveal that an Italian citizen or a citizen of a third country must present the original passport which must be valid for 6 months with blank pages to affix the visa sticker. A third country citizen must also present the Italian Residence Permit plus a photocopy. http://it.chineseembassy.org/ita/lsyw/t195462.htm .. Since you obviously don't hold an Italian Residency Permit as a visa exempted Australian tourist in Italy I don't think that you might get a Chinese Tourist visa here. On the other side things are changing fast nowadays and the information on the Chinese Embassy's website is from 2006 and has never been updated. You better check with the Chinese Embassy or Consulate nearest to your place of residence in Australia before you leave for Italy, as usually only visa applications coming from citizens or foreigners with permanent resident status are accepted at Consulates and Embassies abroad.

It is 90 days visa free for Australians to go to HK. If you'd like to go to China mainland, you need a China visa. You can apply for one in HK. HK is almost the easiest place to get a China visa.
