The Art Institute of Dallas is probably the best culinary school in the city. They are an accredited school and have a great placement rate for culinary graduates. I have eaten many times at the student-run restaurant on campus and it is one of the best deals in fine dining in the city. How much money that you make at your first job I can't answer. Graduates of AID have competed on Food Network competitions. Local restaurant chain Twisted Root was started by AID culinary graduates. The only drawback I could see is that it is not a cheap school. If your finances are tight, I would try El Centro College downtown or Collin College in Plano for culinary training.
