How do I properly dry Bamboo?

I am trying to determine what type of bamboo is in my yard - there are thousands of bees swarming it!?

• We just bought a house and the previous owners had a bamboo privacy fence along the side of the house. Until recently there have been no blooms but the last few days have been very hot and green clumpy blooms have popped out by the leaves attracting thousands of bees and bugs. I am trying to figure out what type of bamboo this is so I know how to properly care for it. I heard the previous owners cut the bamboo to the bottom stem before the snow comes in October - November.
