What is the name of the plant that can grow huge, its green with ball ball like flowers?

Is it an evergreen? Does if t prefer shade? if yes to both and based on your description and colors that this plant produces, I would have to say it is a Hydrangea Bush. I remember my grandfather pushing in several rusty iron nails near the base of the plant to turn pink hydrangea to blue. Much cheaper and it works. Then with the addition of ammonium sulfate you may get even more vibrant colors.

Yes, it's a hydrangea. I've seen white, blue, and pink... and one almost purple.

It's called a Hydrangea. When we were little we called them Bubbles! Did you know, you can control the color of the flowers by controlling the soil mix? Pink flowers can turn blue in acid soils. They can be kept blue by adding aluminum sulfate to the soil. To turn them red, or make them a deep red, add super-phosphate to the soil. For this to be effective though it must be added well before the blooms start. Cool Huh? If you want big,huge blooms you cut out all but a few of the flowering stems. They may never bloom at all if planted in a area that freezes, unless well protected from the cold. A hill of soil,compost,leaves around the base of the plant can help protect it from this. I think these are really cool plants.

XTX and Kathy are correct. It sounds like a mop head hydrangea, a form of Hydrangea macrophylla. It is, I should think, the most widely planted of the hydrangeas, much beloved of the proverbial little old lady. There are hundreds of cultivars, that is forms that vary in their exact characteristics - such as flower size and vigour. There are also many other forms of hydrangea, such as the lace caps and the species (my favourite is H. villosa) so if you are buying make sure you get the right one.
