Plant species for hydroponic research project?

I'm going to conduct an experiment on the ability of a plant species to absorb arsenic in water. The experiment will be carried out in a hydroponic aerogarden. I need a plant that will germinate and grow quickly (40-50 days), does not grow very large, and is easy to grow. A commonly edible plant that usually grows in a somewhat moist soil.

I suggest lettuce. Grows well in hydroponic solution and ready in 35-55 days. Use leaf varieties. Tom thumb is good.

Watercress. You'll get a faster start if you start it from cuttings (such as you can get at the supermarket) instead of seeds.
