I help out at my daughter's restaurant washing dishes, a few days a week and for several months now. I prefer not to use gloves as I find the dishes can slip out of your hands and your grip on a dish does not feel natural . However, gloves will protect your hands if the water used is very, very hot, and will also protect your hands from changing their skin once a week, due to hot cold and the soap. If you must use gloves find ones that are not completely smooth on the outside.
