What am I to do? I dont even know anymore, i'm so confused.... What am I suppose to eat for carbs per meal? help! For breakfast I had eggs, ham and mixed veggies, corn, carrots, green beans and peas..I am still HUNGRY!!!! I NEED a slice of toast to feel fulfilled, whole grain though, but I read its not good for me!

Answer:
You're actually less likely to get hypoglycemia on a low-carbohydrate diet. When you eat a lot of carbohydrates, especially from sugars, your pancreas floods your body with insulin to control rising blood glucose. This is much more likely to cause wild blood sugar swings. People who are low-carbohydrate diets, even non-diabetics, have a tighter and lower blood sugar range, but that range isn't at all hypoglycemic. I speak from personal experience, too. I have been on a low-carbohydrate for three years. (Fad? Please.) I have lost 85 pounds, I got my A1c down from 11.3% to 5.3%, my cholesterol and triglycerides have improved, and I feel (and look) better than I have in years. I now weigh less than I did in high school. My efforts have probably greatly extended my life expectancy. The only downside of a low-carbohydrate is the expense and inconvenience of eating out at restaurants, but a little research and creativity go a long way there and aren't good excuses to avoid this diet. The reason you're moody on a low-carbohydrate diet is because your body is converting from a glucose-burning metabolism to a fat-burning one. You are literally in withdrawal and what you're feeling is known as the Atkin's Flu. The feelings should subside in a week or two. If you give up the diet, you are never going to get used to the diet, and every time you try again, all the weakness will come back. You have to push through if you want to be on the diet. As a side note, although our bodies run on glucose, we get glucose from protein, too. That's right - meat turns to sugar in the blood! You can actually get all the glucose you need without ever eating a carbohydrate and you can also get carbohydrates from non-grain sources, like veggies. There's no reason to eat whole grains even if you think carbohydrates are vital for survival, which they're not. Plus, being on a low-carb diet pushes your body into ketosis where you make ketone bodies. Ketone bodies are an alternate source of energy that feed your brain and heart. So, that whole ridiculous idea that glucose is the only energy source your body can run on is, frankly, BS. You do not need a slice of toast to feel fulfilled. A lot of your dependence on bread is psychological. I used to think that I couldn't not have bread, tortillas, rice, and potatoes. I probably ate around 400 grams of carbohydrates per day. I could eat a large pizza by myself and down a 2 liter of Mountain Dew to boot. Guess what? I haven't had potatoes or rice in THREE YEARS! It's possible. There's no set number of carbohydrates to eat at a meal. Blood sugar is affected differently by all carbs and the number your body can tolerate is likely different than mine. All my carbs come from nuts, seeds, low-carb dairy, certain cheeses, and non-starchy vegetables. That's it. And if you're hungry after breakfast, eat again. Eventually, you won't need to do this, but in the beginning the appetite can be voracious. Give the diet 2-3 weeks without cheating and if you don't feel better, then you'll need to re-evaluate it. But you need at least two weeks otherwise you'll never adjust. P.S. The people who are telling you to eat carbs are not diabetic. I am. It's fine for a person without diabetes to eat 60-80% carbs, but if you did that, you'd have really high blood sugar.

This whole "no carb" diet fad is one of the worst ever. Yes, carbohydrates form sugars. Because sugars are classed as carbohydrates. Those are the ones that provide you with energy. Glucose is the primary energy source for your body, and it is a sugar. A sugar is simply a specific type of chemical, and not all sugars fatten you or cause tooth decay, especially not if they are formed during metabolism. Try and avoid eating refined carbohydrates, such as white bread. But wholegrain is one of the healthier options, since they are not refined and also contain lots of fibre. Wholegrain bread and wholemeal pasta are much healthier than their refined counterparts. But of course, everything in moderation.

Carbohydrates are NOT bad for you. carbohydrates are actually most peoples' (including healthy people) main source of calories. If you avoided carbohydrates altogether, in fact, you would not be eating any fruit, grains, or dairy, which would mean you are avoiding three essential food groups. If you are worried about staying healthy, control your caloric intake rather than your carbohydrates. I know that personally, since I am a runner, I need most of my calories from carbs, which are easily broken down into sugars (which is a good thing. Sugar is what your body uses for respiration), which gives me energy. About 80% of my diet is carbohydrates, and I'm perfectly healthy. If you have any more questions, feel free to ask.

The Atkins fad can actually harm your kidneys (or high protein diets, not necessarily low carb), decrease in fiber/whole grains/fruits/vegetables can increase your risk of cancer, cause ketosis, or switching from burning carbs to fat, which can put you at risk for kidney stones/kidney failure/gout. The point is, carb intake should be tailored to the individual, and your best option is to consult your doctor and possibly work with a dietician to determine what's right for your metabolism.
