There is no cure for celiac disease. I'm sorry, you will need to tell your wife that she cannot eat any bread, nan, parotha, chapati etc, but she can eat rice and popadoms (if they are made from dhal). If she uses wheat flour to thicken things, she needs to use cornflour/cornstarch or rice flour instead. It's also possible to use gram flour. If your wife sticks to a traditional Indian diet, without the breads, she should be fine.

There is currently no cure to Celiac disease. You're wife should not eat anything with gluten or wheat. She can still eat Rice and Corn products, along with other alternative grains. :)
