Wheat allergy/intolerance question?

I bought some wheat berries, once milled id cook 100g of them up in a slow cooker for 8 hours before eating. After i eat the porridge id start to sneeze and get a runny nose and phlem with a slight head ache and an hour or after need to sleep for 3-5 hours. In the evening or following morning id have the squits. All symptoms and signs i may have an intolerance or possible allergy to wheat or the protein gluten. Before trying out the wheat berries i noticed i sneezed even when i didn't have a cold once or twice throughout the day (this wouldn't be everyday either) i could never link it to anything as it wouldn't happen straight after or during eating. Id always have phlem. I just need to know other than potatoes and rice what other carb source could i replace wheat containing foods with? Could i really have an intolerance or allergy to wheat i have never felt the signs so strong when eating mcdonalds or bread (saying that 4 medium wholewheat rolls would have be lying down in a coma as well) ? I cannot answer most of your questions. But I can suggest a couple foods. Some grocery stores carry noodles, such as spaghetti or rotini, made out of rice or quinoa or other gluten-free grains such as amaranth. Quinoa is also a grain that people can try. I don't know if you will have a problem with those or not, but they are foods that celiacs can eat. Buckwheat is also something you could try, or it's roasted form Kasha, but be careful some can be cross contaminated with wheat.
