  Well, first I think you need to identify a scientific process as the basis of your game. Possibly you could do a board game about photosynthesis, or about the systems of the body, or about electricity. Then you need to outline an experiment or investigation based upon that process, and using the scientific method. You could make it a Trivial Pursuit sort of game, with different categories, and the board could have obstacles depending upon which system you choose. Players could have to go back spaces if they make a mistake. You could make the board so that some spaces cause a light to come on or a buzzer to sound (batteries and wires would be needed for that).
