Substitute liquid pectin?
-
Can I substitute liquid pectin for dry pectin that the recipe calls for?
-
Answer:
According to this OSU extension article, they are NOT interchangeable. http://ohioline.osu.edu/hyg-fact/5000/5350.html They don't explain why... but from what I understand... Dry pectin is added before the fruit is cooked while liquid pectin should be added after the fruit has been cooked. With that in mind... you can give it a shot by adding liquid pectin after cooking down the fruit.
