How to make a Chow Mein sauce?

  • I'm going to make a Chicken Chow Mein with rice noodles, spring onions, garlic and chilli. Also obviously chicken lol. But, I'm stuck on how to make the sauce. I love the one I get at my local takeaway. It's like a red color and is spicy. I don't want to buy a packet one because I like to make what ever I can from scratch. Does anyone have any ideas or recipe for the sauce?

    ok my unknown question asker here it is - CHOW MEIN 1 tbsp. oil 2 c. lean pork, cut into strips or Chicken as you want 1 clove garlic, minced 1 c. chopped onion 1/2 c. green pepper strips 1/4 c. corn starch 1 tsp. salt 1 tbsp. soy sauce 1 can chicken broth 1 can chow mein vegetables, drained Brown meat in oil. Push meat aside, add garlic, onion, pepper, saute until onion is soft. Combine corn starch, salt, soy sauce and broth, add to skillet. Cook until thickens, add chow mein vegetables to heat. Serve with chow mein noodles or rice.

Basically there are two types of chow mien, There's the basic or cantonese style, the latter being noodle as a base then a topping poured over. The basic one consists of noodles (fresh or dried) white onion, spring onion (Green parts only), beansprouts and chili all mixed together with chicken. First pre cook you chicken by either boiling or cooking in a good amount of oil then drain on kitchen roll Heat up you pan or wok and add a little oil ( not olive oil ) and throw in a handful of beansprouts, white onion and chili. Stir-fry for a few minutes then add in your pre cooked chicken, shortly followed by your noodles and green part of the spring onion. Now add a good dash or dark soy sauce, a pinch or salt, pinch of white pepper and stir fry a few minutes longer. Next add a dash of light soy sauce, 1/2 Tbls of oyster sauce and a little sesame oil, stir fry for 30 seconds and serve. The cantonese style is basically the noodles stir fried for a few minutes with dark and light soy sauce added with sesame oil. ( keep noodles warm ) The your topping usually consists of the chicken, onions (spring and white) broccoli, 3 crushed garlic cloves, bamboo shoots, water chestnuts and carrot, stir fried for a good few minutes. Then stock is added ( chicken stock ) salt, white pepper, little sugar, 2 Tbls of oyster sauce and dark soy sauce. Its then thickened with a cornstarch slurry ( 2 Tbls or cornstarch mixed with 3 Tbls of water ). Only add the slurry while the sauce is boiling and mix as you stir. Pour the topping over the noodles.
