    Well, there are lots of kinds of bread you could use; many people recommend brioche or French bread (I figure Italian bread would work well too) But personally, I made an AWESOME bread pudding with regular sliced bread and Jello Sugar-free Instant Pudding. I was extraordinarily doubtful it would taste good, but it turns out it tasted *exactly* like the bread pudding I grew to love at my cafeteria. Here's what I used: almost 1 entire loaf sliced/sandwich bread, torn into pieces and dried to an extent (takes too long) 2 packages Jello Sugar-free Cook-n-Serve Instant Pudding (I think non-Cook 'n Serve might work too, but I didn't want to take chances) 4 cups milk (might want to increase the amount of milk and subsequently the number of pudding mixes, depending on how much bread) 2 tsp cinnamon 1 T vanilla extract 1 cup (c)raisins 1/2 cup walnuts 9x13 pan Lay bread pieces, toss around with (c)raisins and nuts Mix pudding and milk in pot until warm, stir in cinnamon and vanilla Pour pudding mixture over bread and let soak for about 10 minutes 350 degrees for about 50 minutes (more if you end up using more milk)
