Do you use dry lemon zest in cakes?

I always zest the skin of fresh lemons for use in cooking. This is dried lemon peel zest which might rehydrate in the cake batter. Soak a bit of the dried lemon zest in a little warm water and see if it softens and tastes more like lemon zest before you use it in the cake.

When I make a lemon cake from a mix I add the zest of a whole lemon. I also add a teaspoon of Almond Extract and two heaping tablespoons of poppy seeds and cook it in a bundt pan. Wondermous. That's a fresh lemon. I do chocolate cakes by substituting strong coffee for the water, adding the zest of a whole orange, and a cup of finely chopped almonds. Again into the bundt pan. If you are going to zest a lot of citrus do yourself a favor and invest the 12 or so bucks in a microplane grater. Wonderful zesters and marvelous on Parmesan cheese. Boney poteet

Use a fresh lemon for baking. The dehydrated lemon can have sugar and sometimes arrowroot on it to keep it from sticking together. Take a lemon, grate it on the smallest part of a box grater. The beauty of doing this is that you not only get the zest, but also the oils in the skin, and that's where the best flavor is.

Just grate the outside of a lemon, its quick, easy and adds the best flavour to cakes. Its best to make your own lemon zest as it has no additives in it :) You can also add lemon zest to plain icing (icing sugar and water or lemon juice) to make a great lemon icing :D I hope this helps :) :)

No. You use fresh lemon zest for anything you'd use it in... whether it's a side dish, pasta dish, meat dish or dessert. I only buy organic lemon, especially if I'm going to use the zest. I don't want to be zesting lemons that have been sprayed with insecticides, or have ink stamps. I don't know why they sell that dry stuff. Pick up a good zester... you'll be glad you did.

i keep McCormick freeze-dried lemon zest on-hand. i can use it when i'm in a pinch with no lemons at home. if it does not smell like lemon, it not totally lemon! i would return it to the store...let them smell it!

I only use fresh zest. It is probably a concentrate that tastes horrible. Put a little into boiling water and allow to cool and then taste to see how lemony it is.
