Easy Polish & Irish recipe help?

My daughter is learning about Poland, she is homeschooled. She has to cook a meal from that country & it has to consist of a main course, 1 side dish, & a dessert. She is 13yrs old. Can you help me think of an easy polish recipe for her to cook. Next, we are learning about Ireland so I was also wondering if anyone had any easy Irish recipes?

Colcannon is great!!! one of my favs. Easy as well. I think that is how u spell it. It is essentiall mashed potatos with kale cream and browned onions. need more, ask.
