What makes the difference between good and bad coffee?

  • Why does coffee taste so much better from a coffee house or, after dinner, at a nice restaurant? I want coffee at my office, but, I have never worked in an office where the coffee from the coffee pot tastes good. (And, I've worked at places where they brew a pot and also have the single servings) Seriously, what seperates a good cup of coffee from a bad cup?

    Care. Good beans, properly roasted (hopefully within the last day or so), ground within the last minute or so (using a grinder that makes the grounds the same size)... Fresh, good-tasting cold water, heated to the proper temperature, and, believe it or not, a brewing of 4.5 minutes. This is the right amount of time to extract all of the nummy flavors and leave the harsh bitter ones... Then. Don't keep the pot on the heat. The fragrant volatile oils will just evaporate, the delicious long-chain molecules that make up the flavors break down and you end up (in about 20 minutes) with sour, brackish, battery acid. Drink it, share it, don't keep it around. Do I need to mention clean cups? I didn't think so... Best wishes!

clean the pot with vinegar, run it through one cycle and then one more time with water and it should give the coffee a better taste.

Starting with whole beans, and not ground/freeze dried/instant coffee. Good beans that are ground fresh...then, the strength has to be right. Not too weak, nor too strong. There are many ways to brew coffee. The most common is an electric pot. While it does the job, it can make the coffee have a burnt taste as it sits on the hot plate. I use a press pot - grind the coffee and put into the press pot and then add hot water. Then, you press the coffee down. This is my favorite way to have coffee. Finally, you can use a filter and a cone and set it on top of a mug and pour hot water through the cone - also makes great coffee. You are likely having very fresh coffee when you go out - it may be brewed in an electric pot, but they probably change it frequently so it doesn't taste burnt. They also make electric drip coffee machines that pour into a thermal pot so no hot pad is necessary. It's like a thermos coffee pot - that also makes good coffee. Try it at home. Buy some good whole beans and start experimenting.

you should go to hawaii and get Kona Coffee - once you have had it then you will know that coffee is different and you wont want to drink any other coffee except for Kona from then on.

I use Kauai Coffee, which unlike most Hawaiian coffee tastes more like Jamaican Blue Mountain coffee. There are a lot of good suggestions here. One of the biggest problems with office coffee is the cleanliness of the top of the coffee maker. Make sure to clean the leftover grounds from the top of the brewer. Also my favorite tip for a great cup of coffee is to stir the pot after it is done brewing. This will mix the stronger (but more bitter) coffee on the bottom with the weaker (but smoother) coffee on the top and give every cup a well-rounded flavor and taste.

Temperature makes coffee taste bad.It releases the oil in the coffee bean creating the bitter taste. Office coffee pots do not have a good thermostat on the heater tray,so if you want fresh tasting coffe git a coffee carafe and soon as coffee is brewed transfer it to there. Hope this helps,use a good brand of coffee also and filtered water.....George
